Chinese Chicken Salad

2 Tablespoons Sugar

3 Tablespoons Rice Vinegar

1 Teaspoon Salt

1/2 Teaspoon Pepper

3 drops of Sesame Oil

1/2 cup Canola Oil

Mix above ingredients for salad dressing

add to

Lettuce

Green onion

1/4 cup Silvered Almonds

2 Tablespoons Sesame seeds

2 Shredded Cooked Chicken Breast

Peanut Butter Cashew Dip

2 (8-ounce) packages cream cheese
1 cup cashew pieces, chopped
1/2 cup creamy peanut butter
2 tablespoons chili paste (recommended: Sambal Oelek)
1 teaspoon curry powder

3/4 cup coconut milk (recommended: Thai Kitchen)
1 tablespoon lime juice
1/4 cup finely chopped cilantro leaves, optional

Serve with veggies

Cheesy Salsa Chicken

4 boneless chicken breasts
1 cup of your favorite premade Salsa
1/4 cup water
4 slices of Jack or Pepper Jack Cheese

Combine chicken, salsa and water in frying pan on stove top. Bring ingredients to a boil then reduce heat to low and cook about 30 minutes. Turn Chicken a few times. Once completely cooked, turn off stove and cover chicken with cheese slices and serve with rice or your favorites veggies.
